Easy Chocolate, Peanut Butter Cookies
I love anything chocolate and peanut butter so when I came across this recipe that I then changed up to suit my sweet tooth, I knew I was in love!
- 1 cup flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup (1 stick) of unsalted butter or margarine, softened
- 3/4 cup creamy peanut butter (for a variation, you could use chunky)
- 3/4 cup granulated sugar
- 1/2 packed cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1.4 cup granulated sugar
Preheat the oven to 375 degrees.
In a medium bowl, mix together the flour, cocoa powder, baking soda, and salt.
In a stand mixer (Love my KitchenAid) beat the butter, peanut butter, sugar and brown sugar until smooth. Then add the egg and vanilla, and mix until blended. Gradually add the flour mixture and mix.
Put the remaining 1/4 cup granulated sugar in a small bowl. Form into 2 inch balls (I use a cookie dough scoop) and roll the dough in the sugar to coat. Arrange 12 at a time on an un greased cookie sheet. Using a fork, make the classic sugar cookie criss cross.
Bake for 10-15 minutes or until the tops crack. Let cool on cookie sheet for 3-5 minutes before transferring to a cooling rack. These are delicious and great with ice cream!
