Dine Like a Diva: What to do with your Corned Beef Brisket

Corned Beef Brisket is on sale again at Fred Meyer this week! So that part of the meal doesn’t need much of a recipe, does it? Put it in the crockpot (or your oven) and you’re good to go! But what do you serve with it?

Well, if you want to be traditional, how about cabbage and red potatoes?  If you’re going for the super simple approach you can just add the cabbage and potatoes right into the crock pot (and carrots if you want).

Want to put 10 more minutes in?  Slice up your cabbage with an onion and saute it with with some butter, salt, and pepper.   Steam your red potatoes and toss with dill, butter, salt, and pepper.

Have leftovers?  You can make corned beef hash!  Here’s an easy recipe from allrecipes.com:

Corned Beef Hash

6 large potatoes peeled/diced
12 oz corned beef
1 medium onion
1 cup beef broth

In a large skillet over medium heat combined all ingredients.  Cover and simmer until potatoes are soft and liquid is almost gone.  Mix well, season, and serve.

Want some more ideas for the leftovers?  Throw it into a stew as a great base, a beef pot pie, breakfast tortillas, barbecue sandwiches, brisket quesadillas, queso (add some velveeta and rotel to the shredded meat), beef salad, …. the possibilities are endless.  And the meat is just $1.79/lb at Costco this week.  Cheap and easy meals!
